Wet markets are full of color and life — but behind those bright vegetables and meats may hide a darker truth. To keep food looking “fresh,” some unscrupulous sellers use industrial chemicals like formaldehyde, borax, and synthetic dyes. Here’s what you should watch out for.
🥬 1. Vegetables: The Formaldehyde Trap
Reporters have found vendors soaking Chinese cabbage in formaldehyde solution to prevent spoilage. These veggies often smell strange and look unnaturally bright.
Formaldehyde breaks down with heat and water, but the safest way is to wash thoroughly and cook well before eating.
As for pickled vegetables sold in open air, they’re easily contaminated by dust, bacteria, and flies. Improperly made pickles may also contain nitrites, a known carcinogen. Avoid any homemade-looking pickles from unregulated stalls.
🍖 2. Meat: Toxic Tricks Behind That “Fresh Look”
- Formaldehyde-treated organs (tripe, liver, intestines) appear bright white and crisp — but are dangerously preserved.
- Over-colored braised meats may contain synthetic dyes like “Sunset Yellow” or “Sudan Red,” both harmful additives.
- Frozen for too long = Zombie Meat: proteins break down and release toxins. Buy only from certified supermarket freezers.
- Loose meatballs or dried seafood can be near-expiry or repeatedly thawed — a breeding ground for bacteria.
- Borax-treated pork feels springy and looks vivid under light — but borax is banned and toxic, linked to poisoning and even cancer.
🐟 3. Seafood: Bright Colors, Big Danger
Dead fish soaked in formaldehyde look glossy and firm but emit a sharp chemical smell.
Some shrimp and dried seafood are dyed with Rhodamine or Carmine Red to appear fresher. Test by rubbing with a wet tissue — if color comes off, it’s unsafe!

Unlabeled cooking oil, fake soy sauce, and cheap bulk spices are common in markets. Many are made in unregulated workshops using industrial additives or recycled oil.
